Mexican Fish Soup
Ingredients:
- 8 oz of Swan Clam juice
- 2 lemons
- 8 oz of shrimp
- 8 oz of Mahi Mahi (El Dorado)
- ½ cup of diced onions
- ½ clove of garlic
- ½ cup of sliced Mexican Calabacita
- 4 or 5 Green Olives diced
Saute onions and garlic with a teaspoon of Olive olive
Add 4 oz of clam juice and 8 oz of vegetable broth
Add fish and shrimp
Let simmer for 8 to 10 minutes until the fish is done
Garnish with avocados slices and cilantro
Add lemon juice to your liking and Cumin and black pepper
